黑胡椒汉堡包
Black Pepper Burger

【Black Pepper Patties Ingredients】for 6 portions
600g minced pork, 1 big onion(finely chopped), 1 heaped tsp ground black pepper, 2 tsps fresh dill (chopped), 2 tsps Dijon mustard, 1 “Grade A” egg(beaten), 35 g fresh breadcrumbs, 30g grated cheddar cheese, 1 Tbsp sugar, salt & pepper to taste

【Sub-Ingredients】
6 burger buns (split & buttered, toasted), black pepper sauce [refer to page 20 for recipe], ½ bowl mayonnaise sauce, tomatoes(sliced), cucumber(sliced), cheese slices, optional, coleslow

【Method for Black Pepper Patties】
1. Combine all burger patties ingredients and mix with damp hands.(pic 1-3)
2. Form into round patties about 135-150g each same size as the burger bun. Chill for 30 minutes.
3. Preheat non-stick pan, add some oil & pan fry the burger patties over low heat until thoroughly cooked.

【To Assemble】
Lay a layer of bun, top with some mayonnaise spread, cucumber, tomatoes, burger patties, cheese slice & black pepper sauce, top with coleslaw and another half of bun. (pic 4-8)

【黑胡椒肉饼材料】可做6个
猪肉碎600克、大葱1粒(剁碎)、黑胡椒粉1茶匙、新鲜时萝茸2茶匙、狄绒芥末酱2茶匙、A蛋1粒(打散)、软面包糠35克、cheddar芝士茸30克、白糖1汤匙、盐和胡椒粉适量

【配料】
汉堡包6个(横切开涂牛油烤过)、黑胡椒酱1碗 、美乃滋酱½碗、番茄、黄瓜(切片)、芝士片、包菜沙律

【黑胡椒肉饼做法】
1. 把所有材料用手混合。(图1-3)
2. 把肉馅做成圆饼状,约135-150克重,和所用汉堡包一样大小,然后放入冰箱30分钟。
3. 起锅热少许油,把肉饼以小火煎至两边熟透。

【组合】
在汉堡包上涂少许美奶滋,然后放上黄瓜、番茄、煎肉饼及芝士片,淋上黑胡椒酱,再铺上包菜沙律,盖上汉堡包即可。(图4-8)
