香蒜鲜虾意粉(西式) 与 芒果虾球(中式)
Spaghetti Aglio Olio with Prawns(West) AND Mango Prawn(East)

---Spaghetti Aglio Olio with Prawns(West) ---

【Ingredients】
200g spaghetti (cooked), dash of salt, sugar, chicken powder and black pepper, 4 prawns, some chilli flakes, 2 pip garlic (sliced), some butter

【Seasoning】
1⁄2 tsp salt, 1⁄2 tsp sugar, 1⁄2 tsp chicken granules, 1⁄2 tsp black pepper

【Method】
1. Shelled prawns, keep tails intact, devein and wash.
2. Heat butter with skillet, saute in prawn and stir fry till half cook, add in garlic and chili flakes, saute for 1 minute. (pic 1-2)
3. Add in spagahetti and stir well and season to taste, dish out. (pic 3-4)

---Mango Prawn(East)---
【Ingredients】
1 mango, 10 pcs shelled grass prawns, 1 lemon, 1 egg

【Seasoning】
2 tbsp salad dressing, 1 small cup plain flour

【Method】
1. Peel and cut mango into wedges; open cut the back of prawns, cross cut abdomens to prevent them curling during cooking.
2. Place prawns in bowl, add in egg sauce and then coat with some flour. (pic 1)
3. Heat oil in wok until 190℃ hot; fully coat the prawns with tapioca flour and deep fry for 40 seconds, drain.(pic 2)
4. Heat a clean non stick pan, pour in salad dressing to warm up, toss in fried prawns and mango pieces, stir to mix. (pic 3-4)
5. Sprinkle some grated lemon zest on top and serve.

---香蒜鲜虾意粉(西式)---

【材料】
意大利面(煮熟备用)200克、鲜虾4只、辣椒粉1⁄2汤匙、蒜米2瓣(切片)、牛油少许

【调味料】
盐1⁄2茶匙、糖1⁄2茶匙、鸡精粉1⁄2茶匙、黑胡椒粉1⁄2茶匙

【做法】
1. 鲜虾去壳留尾,开背去除肠泥。
2. 在平底锅热少许牛油,放入虾煎至半熟,加入蒜米及辣椒粉炒约1分钟(至熟)。(图1-2)
3. 加入意大利面拌炒片刻,加入调味料拌匀,即可上碟趁热享用。(图3-4)

---芒果虾球(中式)---
【材料】
芒果1粒、草蝦仁10隻、檸檬1顆、蛋1顆

【调味料】
沙拉醬2大匙、薯粉1小杯

【做法】
1. 將芒果去皮切丁;草蝦開背後,腹部輕畫橫刀(避免炒時捲起)備用。
2. 取一碗,放入蝦仁、蛋液及少許面粉抓醃一下。(图1)
3. 起190℃油鍋,將蝦仁均勻裹上薯粉,入鍋炸40秒後,撈出瀝乾。(图2)
4. 起干鍋,加入少許沙拉醬微熱後,放入炸過的蝦仁和芒果塊拌炒均勻即可盛盤。(图3-4)
4. 表層磨上檸檬皮屑裝飾提味即可。
